Creamy Tomato and Red Pepper Pasta

Today I decided to travel to Italy in my kitchen! This meal is a dinner/ main course. Making a creamy tomato and red pepper pasta is simple and it’s actually quite quick. If you manage your time very well, your sauce can be ready by the time your pasta is cooked.


You can change this recipe and add a few ingredients of your interest to make this dish special to you. Go bigger go home, but don’t go too big please because you don’t want to ruins the dish. Me personally I like it simple.

Let get started!!


Ingredients:

2 plum tomatoes

2 cloves of garlic

400g jar of roasted red peppers

1 cup/250ml of double cream

1 tbsp of butter

40g of Parmesan (grated)

1 white onion (medium)

Half tsp of paprika

Pinch of salt and pepper

Half tsp of chilli powder

1 tsp of all purpose seasoning

( You can add any seasoning of your choice)


350g of pasta ( in this recipe I used penne pasta)

2 tbsp of cooking oil

1/4 tsp of salt


Food preparation equipment

Large saucepan

Skillet pan

Wooden spoon

Blender

Colander

Chopping board

Chef’s knife


Method


Step1

Cook your pasta in the saucepan by adding boiling water, salt and cooking oil. Cook for 8-12 minute.


Step2

While your pasta is cooking, your now need to prepare your sauce.

On a medium heat stove, melt the butter in a skillet pan. Add your diced onions and minced garlic, fry them until soft and golden then turn off the stove. Chop your plum tomatoes in chunks.


Step4

In the blender put your cooked onion and garlic, chopped tomatoes and roasted red peppers. Blend everything until it’s smooth and consistency.

Step5

Pour the mixture back in the pan and add the double cream. Stir to mix well and let it simmer. After 3 minutes you can now add the parmesan, all purpose seasoning, paprika, chilli powder, salt and pepper. Stir everything together and let it simmer for another 3 minutes. Now drain your pasta and put in with the sauce. Mix well until everything is well coated. You can now serve your food.


ENJOY!

This meal is simple and less time consuming. If you want to make this meal low- carb or gluten free, don't worry I got you!! You can use spiralized vegetables for example: carrots, zucchini, pepper e.c.t. This will add colour, flavour and make the meal healthier. You can even make spaghetti squash along with spiralized vegetables and toss them in the sauce. Its a healthier way of having this meal, it is also delicious. Most people have this theory that is not true about healthy meals. They believe that healthy meals don't taste good. I believe that it's how you make the meal and the spices you use.
